Peanut Butter and Milk Chocolate Cookies

I’ve been searching for the perfect peanut butter cookie recipe for ages, as the ones I’ve tried in the past just haven’t turned out how I’d hoped. I thought I’d give this one a try as it seemed a little different: the ingredients called for not just peanut butter, but actual peanuts, milk chocolate and pretzels too. Surely it was worth a go?



The recipe can be found in Edd Kimber’s The Boy Who Bakes, but you can find it here too. Making these cookies could be the ideal chance to use up excess nibbles: everyone goes over board and buys too many peanuts and pretzels at Christmas!

Ingredients:
300g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
225g unsalted butter, at room temperature
2 eggs
240g caster sugar
220g light brown sugar
250g smooth peanut butter
100g milk chocolate, roughly chopped
40g salted peanuts
40g small pretzels, roughly broken up


Method:
Line several baking trays with baking parchment. Sift the flour, baking powder and bicarbonate of soda together in a bowl and set aside. Using an electric mixer, cream the butter and the sugars until smooth. 


 Beat in the eggs one at a time until fully combined. 


Then beat in the peanut butter.

 
Mix in the flour until just combined. 


Fold in the chocolate, peanuts and pretzels. Chill the dough for 30 minutes or until firm. Preheat the oven to 80 degrees Celsius (160 degrees Celsius fan oven), gas mark 4.



Divide the dough into balls using your hands or an ice cream scoop. Put six on each tray and bake for 16-18 minutes or until browned on the edges and just starting to colour on the tops. You don’t want to over-bake the cookies as they’ll lose their soft and chewy centre otherwise.


Allow to cool on the baking trays for a couple of minutes before removing to cool completely on the wire racks.


These were amazing! They had a strong peanut flavour, complemented by the chocolate and pretzels. I didn’t think it would work, but oddly it did! This was so much better than any other recipe I’ve ever tried, and has certainly become my peanut butter cookie go-to!
