Pea, Ham and Feta Cheese Muffins

Savoury muffins seemed like a good idea at the time (courtesy of Cake Days), but in reality they really weren’t at all! I’m not sure quite what didn’t work – I’m thinking it was the feta cheese – but even so these are not something I’ll be making again in a hurry. That being said however, I thought I’d blog the recipe, the photos and let you see for yourself! The people that tried them said the main issue was understanding that it wasn’t supposed to be sweet and was meant to taste savoury, so if you can get past that then give them a try!




Ingredients:
300g plain flour
1 tbsp baking powder
½ tsp bicarbonate of soda
1/8 tsp salt
2 large eggs
250ml whole milk
85g butter, melted
40g tinned or frozen (and defrosted) peas
60g sliced, cooked ham, cut into small squares
40g feta cheese


Method:
Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit), Gas Mark 5, and line a muffin tin with muffin cases. This should make 10-12 muffins.

Sift the flour, baking powder, bicarbonate of soda and salt into a large bowl. Break the eggs into a jug, add the milk and mix together. Make a well in the centre of the dry ingredients and pour in the milk and eggs while mixing on a low speed with a hand-held electric mixer.



When all of the ingredients have come together, add the melted butter. Mix on a medium speed until all of the ingredients are incorporated. The batter does become a little doughy – it shouldn’t have the consistency of a pastry dough, but should be more solid than a cake batter.


Add the peas and ham to the mixture and crumble in the feta cheese, then stir them in by hand making sure they are evenly dispersed.



Spoon the batter into the cases, filling them two thirds full.


Bake the muffins for 25-30 minutes or until the tops of the muffins are golden brown and springy to touch. Allow to cool in the tin for a few minutes before transferring to a wire rack.



These are best when slightly warm, but even so the taste was still a little off (not that I’m the best judge – I hardly had a bite due to being mildly allergic to cheese…). If I’m brave enough to try them again I’d use a different cheese. If you attempt them, then please get in touch – I’d like to know what you did differently to get them to work properly!
